The grapes Corvina, Rondinella and Molinara are quite versatile. When picked a bit early, they can create very light, fruity and fresh wines, but if the grapes are left to dry (reducing the water but keeping the sugars), they can make wonderfully rich wines.
The Farina Rosso is the first style, picked early to highlight the fruitiness. After crushing and destemming, the juice is given a cold soak on the skins for almost a week, before the fermentation begins.
If the richness of an Amarone or Recioto della Valpolicella is a bit much for you, the Farina Rosso will be a welcome surprise, with its red fruits, black pepper and pot pourri aromas and flavours, as well as silky tannins and vibrant acidity.
