BK Petillant Naturel Oishi Pinot Gris 2023

The Italians have a word for studied nonchalance: sprezzatura. Good PétNat has a bit of that going on. While it may not be as technically fiddly as Méthode Champenoise, PétNat (pétillant naturel) production is no cinch, and there are a multitude of different ways to achieve the secondary ferment in the bottle necessary for this rustic, ancient-method sparkling wine. Our approach is to start with beautiful, organically-farmed grapes – picked early with high acids – and then cut no corners and add no juice in the pursuit of a wine that is bright, glittery, and fun. Textural palate with brioche breadiness and a tart, tight finish that captures its long, slow, cool vintage.
