With a back-bone of Swan Valley Chenin Blanc, the free-run juice is stabilised in stainless steel with Margaret River Chardonnay and Frankland River Gewurztraminer skins are added and then fermented with a natural yeast culture.
This dry white has all the gentle aromatics, botanicals and florals reminiscent of Loire Valley with a touch of Alsace spice. Kaffir lime, citrus and almond blossom and of course, lychee, lemongrass and ginger notes abound – weight and texture from the Chenin Blanc and a small addition or Riesling give clean acidity and length!
