Our With and Without series is a chance for us to showcase the differences between two techniques – Dry Hopping with Clean Fusion™ versus our former “traditional” method. So you, us, others, and whoever can take home a piece of our R&D program to taste and try at home. Without DIPA is day zero dry hopped with a slightly larger amount of Nelson Sauvin at the start of fermentation for a solid dose of 4MMP; something for our yeast to express and play with. The tank is then chilled down in temperature and a single shot of Citra®, Mosaic®, Simcoe®, and Nelson Sauvin hops are added. Inert gases are used to mix everything into suspension before being brought to sub-zero temperatures. Although we find the pure hop character more muted, the interaction of these hops with our house yeast seems to provide a great balance to the beer.
