Nelson Sauvin '25 is a small-batch, barrel-aged saison crafted with a mixed culture base and finished with a generous dose of whole cone Nelson Sauvin hops from the 2025 harvest. It opens with bright aromatics of white grape, citrus zest, and a hint of gooseberry, wrapped in a wild, vinous funk from its time in oak. There’s texture from extended aging, a gentle acidity, and a soft bitterness that lingers just long enough. At 5.6%, it’s zippy, layered, and deeply expressive of time and place in the Tweed Caldera.
