The fruit comes from Mount Gambier and Heywood in South West Victoria. This is Xavier’s original flagship wine. Made to make people happy. As Xavier says, it's everything that a Pinot Noir should be! The grapes are 100% destemmed and fermented in stainless steel for 2-3 weeks. Pressed and aged in a mixture of stainless and old barrels then filtered and bottled in July. Simple.
This Pinot has a translucent bright ruby colour, it’s dazzling. It starts with a bouquet of flowers, cherry blossoms, rose petals and hibiscus. There are umami notes of fresh hazelnuts in skins, game meat and wet forest floor. Flavours are full of cranberry juice and tart cherries with a hint of sweet kirsch character. It has a light touch, savoury finish and lifted acidity. Very moreish, so easy to drink.
