Working Title Hive - Shiraz Barrel Aged Sparkling Mead Can Sgl

Going next level with the Hive project, we wanted a crack at a traditional, higher abv, fully mead, mead. Pure raw honey from Hoodlum, was fermented fully dry with Chardonnay yeast and left on lees for 1 month to build texture. It was then racked to fresh fill Sons of Eden Shiraz Barrrls and aged for a further 6 months.

Presenting as a gorgeous pink hue, the barrels are on full display. The base mead is delicate and dry, with some fruity esters and soft honey notes. This provides the framework to hero the Shiraz, with red berries, spices, a balancing oak mouthfeel and dry tannic finish. It’s complex and sophisticated, a red wine drinker’s mead.
