Dragon Fruit & Yarrow is a mixed culture ale that showcases Caldera’s patient, place-driven approach to fermentation. Aged for 18 months in French oak and bottle-conditioned through winter, it pours a vivid pink with soft, wild complexity. Expect forest floor, vanilla, and rum ‘n’ raisin from the oak, lifted by subtle herbal tones of yarrow and layered over red berry acidity from organic dragon fruit. Raw Tweed Valley honey brings balance and a smooth, lingering finish. It’s deeply local, quietly expressive, and built to pair—try it with beetroot, feta and dill on rye.
