This New Release Sauvignon Blanc is perfectly shaped by its cool Derwent Valley terroir and the season. This is an expressive and softly textured style, made using the Méthode Naturel philosophy: handpicked on a flower day, slow whole bunch pressed, and wild fermented in seasoned demi-muid barrels. The wine is bright, fruitful, and fresh, bursting with classic Sauvignon notes of passionfruit, sweetpea, lemon, and gooseberry, finished with a fresh basil note. Matured for 12 months, it is bottled unfined and unfiltered with perfect natural balance.
