"Paysan Eh Bien!"—all is well! This is an honest country wine, a floral, textural, medium-bodied red banger made in small terracotta amphorae. It was wild fermented on skins for over 30 days and rested in amphora for a full year before bottling. This process gives it a complex and savoury profile, bursting with spicy blueberry, charcuterie, and smoky liquorice allsorts. It's an expression of Pinot Noir dreams, bottled unfined and unfiltered with perfect natural balance and minimal sulphites.
