The Whale of Biwa Lake is a Ginjo sake from Kitajima Brewery that drinks as graceful as its namesake suggests. Brewed near the shores of Lake Biwa, it offers delicate floral aromas with notes of white peach, melon, and a hint of anise. The palate is clean, soft, and gently fruity with a refined umami undercurrent and a whisper-dry finish. Polished to 60% and made with soft local water, this sake is versatile enough to enjoy chilled on its own or alongside fresh sashimi or grilled white fish.
