Ex Nihilo (Latin for "out of nothing") is a serious and beautifully textural take on Pinot Gris. Winemaker Owen Latta has given this wine a light sheen of skin contact to build body and character, which lends it a subtle onion-skin colour. It's packed with an incredible amount of flavour, including spiced pear, yellow-plum, lemon rind, and a lovely textural, mineral-laden flight across the palate. Crisp, detailed, and finely-boned, this is the perfect place to start if you want to see Pinot Gris made as a fine wine.
