Sourced from 28-year-old organically grown vines in the sandy soils of Blewitt Springs, this Chenin Blanc displays a surprising aromatic intensity of quince, apple, and pear. Fermented with a higher level of solids and taken through full malolactic fermentation, it boasts a beautifully vinous character and a signature pithy, savoury edge. Generous, approachable, and made with minimal intervention—this is an aperitif-style sparkling explicitly built to be popped the second you walk through the door.
