'This is serious Rosé,' says Rachel Hoare-Jackson, one half of Novum. 'So often, a Rosé is made from excess or lackluster fruit that has come from an overcropped vineyard. Novum Rosé is the antithesis of this. Every part of this wine has been carefully considered to make not only the best Rosé but also to illustrate a sense of place.' That place is the Quarters Vineyard. Undoubtedly one of the most significant sites in Marlborough's Southern Valleys for Pinot Noir. It is certified organic, dry-grown, and the 30-year-old vines are farmed with the utmost care by Will & Rachel.
Recognising early that certain blocks and clones held the potential for exquisite Rosé, the team got to work, thus Novum Pinot Noir Rosé was born. Picked roughly 2 weeks earlier than the red Pinot Noir the fruit is concentrated and features powerful chalky acidity. The winemaking is very hands-off with a mix of stainless and old oak for fermentation before 6 months of lees aging. As is the case with all Novum wines, the aim here is to produce something unique, something that defies convention, and, above all else, something of unquestionable quality.
