This wine is a Single Vineyard Pinot Noir, an expression of single clone d5v12 hand picked on the 9th April . These are from 20-year-old vines grown on gravelly/volcanic terroir located in the Coal River Valley (Tea Tree).
Handpicked at optimum fruit sugar/acid balance. The d2v5 was destemmed retaining 25% whole bunches. Cold soaked for 6 days. Wild yeast, hand plunging with fermentation for 10 days.
Basket pressed to older oak barriques (220L) and allowed to undergo MLF and mature in barrel for 11 months on fine lees.
Gravity racked to tank for four months, then gravity fed hand bottling. Diam cork and wax seal.
Minimal Sulphur addition. No fining. No filtration.

TASTING NOTE:
Colour: Ruby, clear
Nose: The wine shows depth and character of bright red fruits of strawberry and raspberry, spice & culinary herbs on the nose.
Palate: Palate is vibrant and luscious and youthful. Red fruits, spices, rhubarb, sour cherry. Bright acid and fine tannins.
Rich representation of Pinot Noir, the wine has significant power, length and balance on the palate. Layered and complex, this textural wine is a wonderful pairing for complex dishes. This wine has the ability to age significantly and is a medium term cellar proposition.
