A native yeast co-ferment brings added texture and wild energy, while 12 months resting in old French oak softens the edges and deepens the groove. Expect plush plum and blackcurrant from the Cabernet, plus a Shiraz-driven swirl of spice and ripe berries. It's savoury, structured, and dangerously drinkable. Just 85 cases made—get in before it disappears with the tide.
