Outback Distilling Co showcases their Roma maturation program with Release No. 2 of The Pioneers Collection, limited to 649 bottles. Drawn from a single first-fill Australian Apera cask, this 46.0% ABV single malt benefits from the dramatic day-night temperature swings of south-west Queensland. It opens with aromas of ripe cherry, candied orange peel, and dried fruit spice. On the palate, rich malt sweetness is balanced by milk chocolate, buttery toffee, and toasted oak tannins. The finish is long and dry, with lingering warm baking spices and wood sugars. Best enjoyed neat or with a few drops of water.
