Tom Shobbrook’s Poolside is an Australian natural wine benchmark made from biodynamic Syrah grown high in Flaxman Valley. Early-picked, pressed straight off skins, and bottled with zero adds, this sits squarely between a textural rosé and a chillable light red. It opens with aromas of wild strawberry, sour cherry, rhubarb, and subtle peppery herbs. The palate is dry, crunchy, and bright with cranberry acidity, balanced by light savoury tannins and an earthy mineral grip.
