Starting with 100% locally malted barley fermented with American ale yeast, this single malt undergoes initial maturation in new heavily charred American oak before resting for up to two years in French oak ex-Pinot Noir casks from Oregon’s famed Willamette Valley. On the nose, expect inviting aromas of orchard fruit, fresh tobacco, and sweet toffee. The palate unfolds with layers of dark cherry, juicy raisin, and dried fig, all balanced by subtle nutmeg spice and a touch of wine-cask tannin.
