Stepping away from their sweeter fruit expressions, this rare monoblend is a magnificent showcase of patience, crafted exclusively from lambic left to slowly mature for seven years inside a single, massive oak foeder. It pours a brilliant, glowing golden-amber with a lively, effervescent sparkle and a delicate white crown. On the nose, it hits you with a highly sophisticated, complex aromatic payload of dry sherry, aged oak, and funky barnyard dust, backed by hints of tart green apple. The palate is light bodied, bone dry, and intensely vibrant, layering crisp lemon citrus acidity against a soft, rounded oak minerality.Elegant, historic, and remarkably clean, it is a world class masterpiece built beautifully for fresh oysters or deep cellar cellaring.
