The flavor renegades at One Drop are stepping away from their legendary smoothie series to deliver a masterclass in classic, old-school European complexity with Locked On. Born straight out of their technical pilot program, this Imperial Belgian Cherry Sour Ale is built on a diverse grain foundation of wheat, spelt, barley, and rye. The Botany team introduced three distinct strains of lactobacillus, letting them naturally sour the base for three weeks before fermenting it out with a characterful Belgian yeast strain on an absolute mountain of Morello and sweet cherries. It pours a deep, radiant ruby-red, flashing sweet maraschino cherries and funky yeast phenols on the nose. The palate hits with a tart, slightly acetic punch that beautifully mirrors a traditional Belgian lambic, before an addition of fresh cherry juice at canning rounds out a sweet, fruit-forward finish.
