True to their uncompromising farm to glass philosophy, Ashley and Jane Huntington brew this stunning release using raw, un-kilned barley grown right on their own paddocks along the Derwent River. Fermented completely spontaneously with wild yeasts and aged patiently in oak, it pours a beautifully rustic, hazy golden straw hue. On the nose, it hits you with a remarkably complex, expressive payload of green apples, wild field grasses, and a beautifully layered, authentic farmhouse funk. The palate is light bodied, bone dry, and intensely vibrant, letting a sharp, mouthwatering line of natural lactic acidity dance across the tongue. It finishes incredibly clean and puckering, offering a sophisticated, wine like structure built perfectly for matching with artisanal cheeses or rich pork dishes.
