True to their radical estate driven philosophy, Ashley and Jane Huntington use a wild, spontaneous fermentation approach to let the unique terroir of the Derwent Valley sing. It pours a beautifully bright, rustic golden straw hue with a delicate white crown. On the nose, it hits you with a gloriously complex, aromatic payload of wild summer hay, field flowers, and a distinct, beautifully funky farmhouse edge. The palate is light footed, bone dry, and incredibly lively, letting a razor sharp line of natural lactic acidity slice effortlessly through gentle, complex grain notes.
