Operating with a strict farm to glass philosophy in the Derwent Valley, Ashley and Jane Huntington brew this masterpiece using 100% Tasmanian ingredients before subjecting it to a completely wild, spontaneous barrel fermentation. It pours a beautiful, rustic hazy amber hue with a delicate, fine pored white head. On the nose, it hits you with a gloriously complex, aromatic payload of raw cider apples, damp oak wood, and a distinct, beautifully developed barnyard funk. The palate is light bodied, bone dry, and intensely kinetic, letting a razor sharp line of natural lactic acidity dance across the tongue. It finishes remarkably clean and refreshing with a subtle, dry, and tannic structure that screams for a spot at the dinner table.
