True to their absolute farm to glass philosophy, Ashley and Jane Huntington source pristine 'Northstar' Morello cherries grown right in the Derwent Valley. This stellar liquid is spontaneously wild fermented on real fruit skins before spending up to two full years maturing beautifully inside neutral old oak barrels. It pours a striking, deep translucent cherry red with an elegant, soft pink effervescence. On the nose, it hits you with a delightfully rustic, complex payload of bright tart cherries, subtle farmhouse funk, and aged oak woodiness. The palate is light footed, bone dry, and remarkably kinetic, balancing juicy, fleshy stone fruit against a razor sharp, mouthwatering natural acidity. Structured with delicate tannins, it finishes completely clean and refreshing.
